Dear, Readers

Thanks for visiting Spoon My Curves, I’d like to extend a warm welcome to each and every one of you and tell you a little bit about my story.

My awareness of my health, general wellbeing and food I guess only really started when I began suffering health complaints! In my early 20’s I was obese according to the BMI chart, un-fit and unable to prepare healthy fresh meals. Our staple meals revolved around placing pizzas and prepared chips in the oven and microwaving with little confidence in the kitchen at all.

As a young mum, with little know-how and confidence on how to cook, my husband was left to do majority of our family cooking. Over time, as my confidence improved in the kitchen, I started cooking from scratch with raw ingredients and slowly I noticed improvements in my irritable bowel but slowly the ‘bad’ processed food crept back in to our diets….

Many years later when my children were 2 and 6, I was diagnosed with Papillary Thyroid Cancer and after only a few weeks had a thyroidectomy and 3 months later went through radio-iodine ablation treatment to ablate the remaining thyroid tissue.

Upon diagnosis my husband and I turned to researching diets, juicing and alternative, holistic therapies to help speed up the recovery process after surgery and treatment. Years on, I have tried many different diets, juicing and alternative means to aid my recovery and in assisting my metabolism in coping without a thyroid. Although I found initial success in juicing and turning vegan, eliminating dairy, meat and processed foods, this has been difficult to sustain, albeit there were clear benefits on my health.

My general wellbeing and mindset after cancer was hard enough, let alone eliminating all the food, I used to love and enjoy! It wasn’t until I started blogging about health and wellbeing on Butterfly Effect that it dawned on me that my approach to eating, cooking and food preparation needed to change. At this point, I embarked on a Nutrition in Practice (NIP) Certificate at Leith’s food and wine school in London to improve my culinary skills, meet like-minded people all interested in food preparation alongside nutrition.

The Nutrition in Practice course helped me understand the importance of balance and moderation but also addressing the enjoyment, the taste, look, smell and preparation of your food. Armed with an understanding of nutritional balance and a wealth of new culinary knowledge and friendships, Spoon my Curves was created.

As a training Naturopathic Nutritional Diploma student, we are looking for case studies that would be willing to partake in our training practice and as a thank you, Spoon my Curves is offering discounted clinic rates for those wanting to pursue a better relationship with their food.
